The Noir de Bigorre pig is a noble animal par excellence, the representative of a genuine heritage and the result of an ecosystem which has linked the animal, the natural environment and man for centuries.

The Bigorre pig and generations of humble and determined peasants have thus passed onto us the heritage of an exceptional reserve of flavour, and today, as we taste its two emblematic products, the ham and the pork, we measure the irreparable loss which the final extinction of the last breeding stock would have meant.
